Jamaican Jerk Chicken

Ingredients:

½ tsp. cinnamon

½ tsp. allspice

¼ tsp. ginger

¼ tsp. cloves

½ tsp. minced jalapeno chili pepper

4 spring onions

1 tbs. olive oil

4 chicken breasts

 

Directions:

Blend spices, add onions and olive oil. Place in baggie with chicken and coat. Marinate overnight. Grill for 10 minutes.

Our Healthy Hints: Leftovers can be refrigerated and enjoyed on top of a salad the next day.

Bariatric Bites: Grilling chicken can leave it somewhat dry. Marinating it overnight can help combat the dryness. Early on after surgery, you may want to bake or pan fry to keep the meat extra moist.
